Edna's Lemon Curry

Description

‘Eres a nice lil recipe that pops in and out of my head at random, sort of like one of those subliminal sex ads running on BBC 3 late night during Tittybangbang and Eastenders. For some reason Vikings love this recipe, as do Members Parlment.

Ingredients

2 cups chicken broth (Squeeze the chicken tightly to get the last ounce of liquid out of him) 2 tablespoons lemon juice 1 cup uncooked regular long grain rice 1 teaspoon grated lemon rind 1/2 teaspoon curry powder 1/4 teaspoon garlic salt 1/4 teaspoon pepper 2 tablespoons toasted sliced almonds 2 tablespoons minced crystallized ginger (the actual spice not the Spice Girl) 1 Bottle of Port or Sherry

Directions

Heat the broth, and lemon juice in a medium saucepan until boiling.
Add the rice, stir, and turn heat low.
Cover and simmer for 15-20 minutes until rice is tender and liquid is absorbed. Have a nice glass of Port or Sherry
Remove pan from heat.
Stir in lemon peel, curry powder, garlic salt and pepper.
Cover and let sit for 10 minutes. Have some more Port or Sherry while you wait.
Fluff rice lightly with fork, tantalize it teasingly till it grows in volume then sprinkle with the toasted almonds and ginger.

Serve while wearing a Norse helm for that festive feel.
