Edna's Salmon Mousse

Description

Today we are going to try a wonderful recipe sent in by the late Angela Tildenstoke of Upper Darby. She swore that this festive addition to any dinner party was always her show stopper. I can’t agree more.

Ingredients

1 pound salmon fillet, skin off and pin bones removed , Use fresh salmon, never tinned though tinned is a good way to cut preparation time...its a matter of health, just ask Angela, oh wait you can’t, she killed several people by using tinned salmon one night but the time it spares mucking about in the kitchen sometimes is worth it. 1 teaspoon extra-virgin olive oil Salt and freshly ground black pepper 1 pound soft cream cheese , place the package under your arm to warm. 1/4 cup brandy, The rest can be a great way to relax before your guests arrive. 1 lemon, zested and juiced Salt and freshly ground pepper

Directions

Preheat the oven to 400 degrees F.
Season salmon fillet with olive oil, salt, and pepper.
Place on a baking sheet and bake until cooked through, about 10 to 12 minutes. Remove from the oven and cool completely, chill for at least 30 minutes.
Enjoy another glass of that Brandy
Put the chilled salmon fillet in a food processor. Add all other ingredients and blend until smooth. Season with salt and pepper, to taste.

There are all types of ways of serving the mousse, as a dip for veggie, on crackers, spread about one’s body as an enticement for procreation...the sky’s the limit.
